Easy Gooey Butter Cake


Easy Gooey Butter Cake

What you will need:
1 Box yellow cake mix
1 stick melted butter
4 eggs
1 8oz cream cheese
2 cups powdered sugar

Preheat oven to 350.  Lightly grease 9x13 pan
Mix together cake mix, 2 eggs, and melted butter.  Pat mixture into pan.
Mix cream cheese, powdered sugar and 2 eggs.  Pour over first mixture.
Bake for 25-30 minutes.  Sprinkle with powdered sugar while still hot.




Told you... Easy!  I even used the same bowl to mix both mixtures.  
The hubs is a huge fan of gooey butter cake.  This recipe got 2 thumbs up from the family.  
One kiddo told me it was ridiculously good.  I guess it's a keeper.

Target $3.99 movie sale

Target has lots of movie titles on sale this week for $3.99.  I picked up some oldies but goodies.  
My son and I are laughing our heads off watching Men in Black. 
I also found National Lampoon's Vacation (can you say Walley World?), Willy Wonka and the Chocolate Factory (LOVE!), and Casper (great movie).  My oldest son watched Casper so much that I can probably recite it years later. I'm sure I will test this theory later in the week.
Better yet, I paid with gift cards previous sales.   Score!
I was going to put some of these away for Christmas but I just couldn't do it.  I wanted to watch them all.  They had lots of movies that would make great gifts.

Jif Mocha Cappuccino Cookies



When Jif came out with their new Mocha Cappuccino spread I immediately thought about making cookies with it.   I had seen the Nutella recipes and I knew this would be to die for!   Chocolately brownie deliciousness mixed with coffee?   What more could I ask for?

Here's what you are going to need:

3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1¼ cups Mocha Cappuccino JIF
4 tablespoons butter (softened)
1 1/3 cups granulated sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup milk
powdered sugar

Preheat oven to 375
Mix Jif, butter, and sugar together.
Add in eggs, vanilla, and milk until well blended.
Slowly add in salt, baking soda, and flour.
Roll into balls.
Roll balls in powdered sugar.
Place on parchment paper covered cookie sheets.
Lightly press them down.
Bake about 10 minutes.


My Nutella crazed kids preferred these cookies to the plain Nutella Cookie.
They are delicious!  Enjoy!


Nutella Cookies



I have been wanting to try this recipe for a while now but haven't found the time.  I have never tried Nutella but my kids LOVE it.  When I first told my oldest about these cookies he was in awe.   He was wondering why I hadn't made them yet.
It's a really simple recipe with very few ingredients.  I added a bit of baking powder and milk to my recipe.  I just felt like I needed a leavening powder and then the milk to help mix everything into a manageable dough.

1 cup Nutella  (about one 13 oz jar)
½ cups Sugar
1 cup All-purpose Flour
1 whole Egg
pinch of baking powder
about a teaspoon of milk

Mix Nutella, sugar and egg together.
Then mix in the flour and baking powder (optional)
Use milk if you need something more to thoroughly mix your dough.
Roll into balls.  Place on parchment paper covered cookie sheets.   Press down balls with the palm of your hand.
Bake at 350 for approximately 8 minutes.   Let cool on sheets for 2 minutes then place on a rack to cool completely.
Yields about 24 cookies

These cookies are pretty yummy.  I'd never tried the Nutella until I tried these cookies.  Yumm...  I'm sure these will be a regular in our baking line up.  The oldest was pretty impressed.  They are almost like brownie bite cookies.

Taffy Apple Pizza

Attention all friends and family:
Everyone that asks me for this recipe.  Here it is!

This is in no way my recipe.  It is an old Pampered Chef recipe.

What you need:
1 package (20 ounces) refrigerated sugar cookie dough
1/4 cup creamy peanut butter
1 8oz cream cheese softened
1/2 cup brown sugar
1/2 teaspoon vanilla extract
2 medium Granny Smith apples
1 cup lemon lime soda
cinnamon
1/4 cup caramel ice cream topping
1/2 cup peanuts (optional)

Preheat oven to 350.  Roll out dough on your pizza stone or cookie sheet (raised edges).   Bake for 10 to 15 minutes or until lightly browned.  Cool.
Blend peanut butter, cream cheese, brown sugar, and vanilla together.
Spread onto cooled cookie.
Use an apple corer/peeler/slicer to prepare your apples.  You could also peel and slice your apples or chop.   I used pampered chefs corer, peeler, slicer.   Then quarter.   Dip apples into soda to prevent browning.
I like to dry my apples off a bit on a paper towel (optional).
Arrange apples on your cream cheese mixture.
Sprinkle lightly with cinnamon.
Drizzle with caramel ice cream topping... Let's be honest here.  I do not measure this.  Just pour it on!
Sprinkle with optional peanuts.  I usually leave these off.
Cut and serve!

2 tips:
1. It's helpful to loosen your cookie off the pan after it cools and before you dress it.
2. This recipe does not store well.  It gets soggy.  I only make for gatherings when I know it will be eaten that night or day.

This time I doubled the recipe and used a 12x17 bar pan.  It made my cookie thicker than it should be but I wanted a covered pan.  I usually use 2 16 inch round pizza stones.
BEWARE:  people will fight over this dessert.  Or maybe that's just my friends and family?!  Enjoy responsibly!
