Freezer Cooking Today


Today I got a little bit of freezer cooking done.  Did you know you can freeze pancakes?  Make normally then let them cool completely.  I use a rack.  I put some in the fridge for tomorrow and the rest in the freezer.  I put them in tupperware.  The kids can pull out what they want, when they want and microwave.


Another great time saver is precooking bacon.   I line 2 sheet pans with foil.  Lay bacon out flat.  Put in the oven THEN turn it on to 350.  Bake about 20 minutes.   Lay in on paper towels to cool.  Then place in containers.  Perfect flat bacon every time!  
Homemade pancakes are so much better than the prepackaged frozen ones.

Freezer Cooking Lasagna

Lasagna is one of our favorite dishes around here.  It is a treat since it takes so long to prepare.  That is why every time I make it, I make more than 1.   I bought foil half pans from Sams.  Usually 2 boxes of lasagna noodles will make 3 pans.
Prepare normally.  Then I take the 2 extra pans and wrap them in saran wrap. I do not bake the 2 I am going to freeze. Put the foil lids on the pans and mark the date.
Tada....  Sunday dinner any day of the week.
Lasagna freezes well.
